If you said, Yes please! (is there really any other answer?), then you are in luck! The Firkin Group of Pubs is looking for a Kitchen Manager to work in one of our downtown Toronto locations.

To be successful in this role you need to have strong leadership skills, be dedicated to producing high quality food, and come to work everyday with a can-do attitude!

The overall responsibilities of this role are to prepare, cook and present quality food quickly and efficiently while overseeing the smooth running of the kitchen.

You will need to supervise, train and motivate all members in the kitchen and work closely with the General Manager to guarantee optimal communication with the front of the house.

You will also be expected to focus on optimising profits by controlling food, production, labour costs and supporting increased sales through food quality and speed of service.

This position will report to the General Manager and the Director of Culinary.

Necessary Skills and Experience :

  • 5+ years working in a full-service kitchen
  • 2+ years working in a Kitchen Manager position
  • 2+ years food ordering / kitchen inventory management
  • Demonstrated experience of successfully controlling / reducing costs within a restaurant kitchen
  • Excellent communication skills and ability to work with all employees both front and back of house
  • Must be able to maintain a professional level of conduct at all times and set the example for all staff members
  • Pro-active in your approach and with a bias for continuous improvement always identifying areas for improvement
  • Meticulous attention to detail and quality
  • Be able to stand / walk on your feet for long periods of time
  • Duties :

  • Manage the daily opening and closing of the kitchen, conducting daily line checks before and after service
  • Prepare, cook and present food, quickly and efficiently, meeting our corporate standards
  • Assist in keeping the kitchen clean, hygienic and tidy at all times by posting daily and weekly cleaning schedules and address any maintenance and / or repair requirements in a timely manner
  • Manage and maintain correct staffing levels, post BOH schedule at all times with a bias to reduce overtime whenever possible
  • Maintain accurate food-ordering and stocking levels and conduct monthly food inventory and submit to head office in a timely manner
  • Adhere to all Company policies and procedures and follow direction from management team and head office
  • Input and maintain all prep lists and inventories
  • Making sure that every kitchen employee is fully trained according to the corporate standards
  • Utilize the Firkin Library for food specials and cost accordingly
  • Ensure proper food handling procedures followed at all times and make sure that staff have received proper Food Handler training
  • Manage BOH uniform deliveries and maintain proper par levels by making adjustments when needed
  • Ensure proper safety practices are being followed. Follow proper procedures for all employee and guest accidents / incidents.
  • Maintain proper file of required paperwork for worker’s compensation issues
