What you will be doing :
He / she is responsible to plan, organize, control and direct the work of employees in the banquet kitchen, while ensuring quality and consistency of all food products.
Leading and providing guidance and training to culinary team in all food preparation and execution of the events
Consistently is looking ahead at banquet business levels and operational needs and ensure effective scheduling of banquet culinary staff and correct ordering of food volumes & equipment
Plans and organizes banquets events looking 2-3 weeks in advance
Review the daily BEO with the banquets team, prepare the necessary food items in accordance with Fairmont standards in a timely and efficient manner.
Create menu’s and food cost for those menus, recipes, pictures and training materials to ensure consistency, efficiency to meet the set standards.
Places food orders daily for banquet events, staff dining room, amenities, special events.
Effectively manage food costs and production control to reduce wastage and manage labor costs and find efficiencies when possible.
Communicates effectively and works with multiple department on a daily basis, culinary, stewarding and cater & events team, to ensure all details of events are realized and banquet event success
Conduct daily shift briefings with culinary team members to review daily / weekly operational needs and specific details.
Kitchen maintenance and cleaning. Following food safety requirements.
Maintaining proper rotation of product in all chillers to minimize spoilage
Follow all safety and sanitation policies when handling food
Ensure that all food products are handled, stored, prepared and served safely in accordance with hotel and Food Safety guidelines.
Ensure that all ECOSURE standards and processes are completed on a daily basis, this includes but isn’t limited to filling out daily temperature logs, labelling and dating of items as well ensuring food storage areas are cleaned daily.
Apply 5 Diamond and 5 Star Service Standards at all times
Your experience and skills include :
Creative and passionate about food and customer service
Is a self-starter and displays initiative and curiosity for all food related items
Strong communication & organizational skills, able to give clear direction, set expectations and provide training to team members
Able to work without supervision and display sound decisions make skills
Experience in training culinary team members and developing less experienced team members
Able to work in a fast paced, high-pressure environment
Excellent interpersonal and communication skills; a team player.
Completion of a recognized culinary program
Must be Food Safe Certified
A neat, well-groomed appearance as per hotel standards
Must be available to work a variety of shifts including evenings, weekends and holidays
Previous experience in a luxury hotel or restaurant environment is an asset
Career minded with strong personal initiative and a desire to achieve the department’s vision and goal
Physically fit to stand for long periods of time and lift 20kg regularly throughout a shift.
