Your day to day

Reporting to the General Manager and Food & Beverage Manager, you will be a truly passionate kitchen leader who has the ability to inspire, lead and develop a high performing team.

You will be responsible for running the hotels culinary team, including producing food for our Locavore Restaurant, Epoche Bar, Pizzeria, In-

Room Dining and Conference & Events. You will be responsible for ensuring all food is designed, prepared and presented to high standards, in conjunction with ensuring supplier quality, compliance to HACCP and the management of your food cost.

You will also demonstrate your knowledge of highlighting local cuisine and produce, to create memorable Hunter Valley experiences, in addition to working closely with your food & beverage colleagues to drive all food & beverage opportunities for the hotel.

You’ll have ambition, talent and obviously, some key skills. Because, for this vital role, we’re looking for someone who is a truly exceptional professional who is passionate about food, wine and delivering a superior guest experience.

Most importantly you will be a true brand and local Hunter Valley ambassador in everything you do! Please note this role will primarily be required to work across a rotating roster in accordance with business needs.

This will include afternoon / evening shifts, across a rotating roster which includes weekends and public holidays.

What we need from you

Our passionate foodie must have :

  • A formal Commercial Cookery Certification
  • 2 4 years of demonstrated performance in a hotel environment as a Head Chef or Senior / Executive Sous Chef.
  • Strong skill base and experience in a la carte, banqueting and buffet food production
  • Hands On' style, who understands and can deliver on the expectations of a modern and contemporary guest experience

  • Ongoing commitment to quality and providing a truly unique experience to our guests
  • Possess great attention to detail
  • Demonstrated performance leading a successful team
  • Excellent time management skills
  • Superior communication skills
  • A working knowledge and understanding of HACCP procedures, including the training of colleagues in procedures
  • Rostering, ordering & payroll experience
  • High standard of personal presentation
  • The flexibility to work various shifts on a rotating roster including evenings, weekends and public holidays
  • You must meet the legal requirements to work in this country
