C., to construction camps in the Alberta Oil Sands. Facilities are located within drill camps, mining camps, construction camps, pipeline camps, oil and gas installations and correctional facilities.

Rotation : 21 / 10

Location : Eastern Quebec, Remote site

Travel : Transportation allowance for Associates to get from the site to home is provided. It is based on the distance between the airport and their home.

Associates will be flown from the airport to the site.

Job Summary

Job Summary : Considered a Chef de Partie responsible for running the pastry operations. Creates, plans and supervises the daily production of top-quality pastries, desserts and baked goods.

Essential Duties and Responsibilities :

  • Supervise the daily production and distribution of all pastries, desserts and baked goods.
  • Ensure recipes and standards are followed, food costs are controlled and appropriate quantity is prepared based on established production needs.
  • Ensure proper food handling, presentation, portion control and maintenance of proper serving temperatures.
  • Monitor and control the maintenance and sanitation of the pastry kitchen and equipment to ensure a work environment that meets / exceeds federal, provincial and corporate standards and regulations.
  • Supervise hourly kitchen / pastry associates, including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action, as appropriate.
  • Help plan and implement seasonal menus.
  • Order and maintain pastry supplies and products to ensure appropriate inventory levels.
  • Qualifications :

  • Proven experience as Pastry Chef, baker or in a relevant role.
  • FoodSafe Level 1 Certification.
  • Post-secondary education in culinary or related studies.
  • Great attention to detail and creativity.
  • Great organization and leadership skills.
  • In depth knowledge of sanitation principles, food preparation and baking techniques and nutrition.
  • Working knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.)
  • Certificate in culinary arts, pastry-making, baking or in a relevant field.
